What's for Supper Wednesday

We love asparagus and I'm always looking for a new way to prepare it. This one was super easy and tied in nicely with the meat entrée.

One of my favorite things to pick up for a quick supper is a rotisserie chicken. Not only is it a healthier choice since the fat drips off, but it's tasty, easy, versatile and inexpensive.  If there is any truth to the saying 'you are what you eat' then I fear that I am truly fast, cheap and easy.

It was one of those nights that we grabbed a bird on the go when getting groceries, but it cooled down before it was supper time.  This is where the new asparagus recipe came in handy.  Since it cooks up in seven minutes I was able to reheat the chicken at the same time.

Here is the recipe for the asparagus:



 Roasted Asparagus with Feta

1 pound asparagus spears(about 20 spears)
Cooking spray
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground pepper
1/2 cup (2 ounces) crumbled feta cheese
1 teaspoon extra-virgin olive oil (optional)

Preheat oven to 450.

Snap off tough ends of asparagus.  Arrange asparagus on a large baking sheet coated with cooking spray. Coat asparagus with cooking spray; sprinkle with salt and pepper.

Bake at 450 for 7 minutes or until crisp tender.

Sprinkle with feta cheese and bake 1 minute or until cheese softens.  Drizzle with olive oil if desired.

  3. Long live the "fast, cheap and easy" asparagus Queen, you mean. I laughed outloud and then paused long enough to realize you could just as easily be talking about me ... hmmmm. Fast, cheap and easy ... sounds more fun than it really is :)

    I will try your asparagus recipe because it is one of the few vegetable I can get others to eat in my house ... they are all hooked on broccoli and corn ... amen. Personally I get a little tired of the same thing all of the time so this is a great option.

    I must comment on your freeway vs backroads post. Again I laughed because I have been on the backroads recently , albeit in a normal car so I didn't have the problems you mentioned ... but the bumpy, narrow and not always paved roads turned out to be more of a pain than access to beauty which was our plan. We did find a wonderful little country restaurant though which made it all worthwhile. I have to agree that it would be a hardship for you, but I am always looking for wildlife and the only wildlife I generally see on the freeway is road kill ... not what I am hoping for. So there are times when having the choice is nice ... but getting to where you are going ... can't beat the freeway. So hear, hear Queen of avoiding hardship ... I'm with you ...

  4. Your asparagus recipe sounds delish! I'm not one for cooking much, but I think I'll give this one a try. I love both asparagus and feta. Now I'm off for an appointment with the Doc to see if he has a magical potion to get rid of this nasty cold I seem to have picked up. You have a fabulous day, hugs, Edna B.
