Coconut Curry Soup

I'm always looking for a Safeway Foods as we travel because I'm addicted to the Coconut Curry Soup they have.  I like to add some chicken, veggies and rice for the best meal possible.  But it's so disappointing to have a craving for this feast and there's no store to be found.  What's a girl to do?

Make your own darn soup!  Yeah, that's what!  I'm not that creative in the kitchen for this kind of thing....spices are basically a mystery to me.  But fortunately, there are some bloggers out there who tinker around in the kitchen and I found a recipe that says it's the same as what's in the store.




I've mixed up a batch, using some shrimp I had on hand and it was pretty darn close to how I remember the soup from Safeway.  Even Left Brain declared it "not that bad", which is high praise for anything with these spices in it.

  1. I know you have such fun trying out new and loving the "old" favorites! I wish my taste buds weren't so sensative. We are leaving Monday and home hopefully by Thurs. Will you have Miss M get the group together...I found something for you so I hope you're not on the run right away. I have Dr. appts on 12, 13, and 14th if I remember...but anytime after...maybe that Friday. I won't have access to email while on the road. Mary Ann

  3. Can't speak for the taste, but it sure looks good. So is it that Left Brain doesn't like spices? Has enough spice in his life having you around? I get it ... you can cook for me any day, Sista :)
